Course #1: A Day in Africa

(Breakfast, lunch and dinner in Lagos)


Akara (Breakfast)

A spicy bean cake gently fried in palm and vegetable oil. Served with white corn porridge

Jollof Feast (Lunch)

Rice cooked in a rich tomato and African spice, served with fish or chicken 

Egg stew (Dinner)

An egg based stew with local peppers and a rich sauce. Served with boiled yam




Course #2: Pepper and Spice

 (The role of spice in African cuisine)


Pepper soup

Soup made with traditional dried spices and fresh leaves, The spices carry and enhance a wide variety of African meats, vegetables, or seafood.

Suya

Barbequed or Grilled lamb, beef, liver, kidney or gizzard with perfumed Suya spices and cooked to perfection.

Red Red

A beans dish made with smoked fish served with rice, plantain  and gari, (a blend of guinea corn, rice, yam, plantain and millet.)



Course #3: Popular African H'orderves


Puff Puff 

An African fried doughnut made with simple ingredients dipped in honey

Pulled Goat Amuse Bouche

Goat meat cooked in a iru based ragu pulled and served on flat bread

Chicken Nkwobi

Chicken spiced with alligator pepper served in a palm oil sauce
